What is the difference between shank and shiv

I've never heard of anyone "shiving someone with a shank" or "shanking someone with a shiv. This is the most hilarious shiv I've read in a while.

So bottom line is that they are both types of homemade knives. A shiv, though, is usually made from something already sharp, like it can be a razor blade attached to the handle of a toothbrush.
